Abstract
As the tourism in Indonesia grows, it also causes the growth of the elements in tourism business, such as hotel, restaurant, travel agent, art shop and others. According to the World Travel and tourism council (WTTC) based in London, by the year 2000, tourism would have created more than 380 million job vacancies worldwide which means a new job vacancy is created in every 2.4 second. tourism can help Indonesia's goverment in increasing goverment's income or devisa, expand and equalize the work opportunitiesfor the society's welfare, and enrich the national culture. one of the growth of tourism industry in Indonensia is the growt of restaurants or places to dine which provide many kinds of international and indonesian tradisional food and beverage. one of the area which has excellent tourism industry is Batam city located in Riau archipelago. the resukts if this research shiws that the fish 'segantang lada" is hghly-nutrinous of protein, carbohydrate and low cholesterol. dues to the respondents answer, it show that they have high preference for "Segantang Lada" fish, moreover because of its delicious taste
