Abstract

Pulau Batam adalah pulau di provinsi Kepulauan Riau, di mana terdapat Kota Batam. Pulau ini merupakan pulau yang paling berdekatan dengan negara Singapore, terpisahkan oleh selat selebar 15 km, dan merupakan kawasan perdagangan bebas (FTZ=Free Trade Zone), bagian dari kawasan Sijori yaitu Singapura, Johor (Malaysia) dan Kepulauan Riau (Indonesia). Salah satu sarana Batam yang mengalami perkembangan pesat yaitu akomodasi, makin banyak hotel dan resort yang didirikan dengan ciri khas masing-masing untuk mengikat daya tarik para tamu yang berkunjung ke pulau Batam, sehingga membuat penulis tertarik untuk melakukan praktek kerja lapangan di Best Western Premier Panbil Hotel Batam. Dalam hal ini penulis mengambil judul “Aktifitas Seorang Trainee di Section Pastry & Bakery Best Western Premier Panbil Hotel” Tujuan penulisan Laporan Kerja Praktek ini adalah untuk mengetahui sistem operasional kerja di Section Pastry & Bakery di hotel Best Western Premier Panbil serta memperoleh dasar-dasar ilmu dalam pengelolahan makanan yang berkualitas di Best Western Premier Panbil, dan untuk memperdalam ilmu pengetahuan tentang food and beverage departemen terutama bakery and pastry. Metode penelitian yang dilakukan oleh penulis dalam menulis laporan ini adalah metode wawancara, observasi, dan studi pustaka. Metode wawancara yang digunakan penulis untuk laporan ini adalah untuk mendengarkan secara langsung informasi mengenai food product di Best Western Premier Panbil Hotel Batam.Untuk metode observasi penulis lakukan untuk laporan ini adalah untuk mencari dan mencatat data-data seperti product recipe yang di dapat dari tugas keseharian penulis selama kerja lapangan di Best Western Premier Panbil Hotel Batam. Sedangkan untuk Studi pustaka penulis menggunakannya untuk mencari informasi teori seperti kerangka teoritis. Praktek kerja lapangan dalam F&B Product banyak memberi ilmu dasar dalam membuat product kitchen dan pastry serta peralatan yang mendukung di lingkungan hotel. Praktek kerja lapangan membuat penulis mampu mengetahui berbagai macam metode baking, membuat berbagai saus dan mengenal berbagai macam bahan-bahan yang belum pernah dipakai ketika melakukan praktek di tempat kuliah. ********************************************************************** Batam Island is an island in the province of Riau Islands, where there is Batam City. This island is the island closest to the country of Singapore, separated by a 15 km wide strait, and is a free trade area (FTZ = Free Trade Zone), part of the Sijori region namely Singapore, Johor (Malaysia) and Riau Islands (Indonesia). One of Batam’s tourism facility flourished rapidly is accommodation, there are hotels and resorts built with their own unique feature to attract tourists that visit batam, that’s why it encourges the writer to conduct training at Best Western Premier Panbi Hotel Batam. In this case, the writer entittle the report as "Trainee’s Activity in Hotel Best Western Premier Panbil Batam at Pastry & Bakery Section. The objective of this Training Report is to have knowledge of working system of Food Product at Best Western Premier Panbil, to get basics knowledge in producing qualified food at Best Western Premier Panbil, and to deepen the knowledge on food and beverage department particularly bakery and pastry. Research methods employed in writing the report is interview, observation, and library research. The Interview method utilized in this research is to listen information directly about food product information at Best Western Premier Panbil. Meanwhile, observation method conducted by the writeris to uncover and remark the data such as product recipe attained from writer daily activities during training in Best Western Premier Panbil. Lastly, library research is used to obtain theoretical information information such as theoretical framework. Training in the F & B Product considerably convey basic knowledge in producing kitchen and pastry products as well as supporting equipment in hotelier. The training rendered the writwe to be able to discern various method in baking, cook various types of sauce, distungish numerous kinds of ingredients that are never been used during practice in college.
