Abstract

Pariwisata adalah suatu sumber pendapatan negara yang sangat tinggi. Perkembangan pariwisata juga dialami oleh beberapa daerah di Indonesia, salah satunya adalah Kepulauan Riau khususnya di kawasan bintan, Bintan merupakan pulau terluas di Kepulauan Riau didalamnya terdapat dua pulau yaitu Tanjung Pinang dan Bintan. Pulau Bintan memiliki tempat wisata yang tak kalah jauh dari tempat-tempat lainnya, yang mempunyai kawasan wisata yang memiliki resort-resort yang bagus dengan memiliki fasilitas yang lengkap salah satunya Bintan Lgoon Resort. Sehingga penulis tertarik dalam melakukan kerja praktek lapanagn di Bintan Lgoon Resort yang berjudul “Prosedur operasional departemen kitchen section western di bintan lagoon resort”. Menulis laporan ini bertujuan merupakan untuk mendapatkan ilmu pengetahuan di dalam operasional di Departemen Kitchen Bintan Lgoon Resort dan mengetahui masalah yang berkaitan dengan operasional di dapur untuk melatih tanggung jawab penulis dalam melakukan perkerja di suatu hotel. Adapun metode yang di gunakan penulis dalam melakukan kerja praktek lapangan yaitu metode observasi dan metode wawancara, observasi dengan cara melihat secara langsung di lapangan bagaimana aktivitas staff secara lagsung di lapangan di Bintan Lgoon Resort dan metode wawancara yang di gunakan dengan berdiskusi maupun sharing dan bertanya dengan senior dan staff. ********************************************************************** Tourism is a very high source of state income. Tourism development is also experienced by several regions in Indonesia, one of which is the Riau Islands, especially in the Bintan area, Bintan is the largest island in the Riau Islands, there are two islands namely Tanjung Pinang and Bintan. Bintan Island has tourist attractions that are not less far from other places, which have tourist areas that have good resorts with complete facilities, one of them is Bintan Lgoon Resort. So the authors are interested in doing practical work at Bintan Lgoon Resort entitled & Operational procedures of the kitchen section western department at bintan lagoon resort & Writing this report is aimed at gaining knowledge in operations at the Bintan Lgoon Resort Kitchen Department, and knowing the issues related to operations in the kitchen to train the author's responsibilities in doing work in a hotel. The method used by the author in conducting field practice is the observation method and interview method, observation by looking directly at the field how staff activities are directly in the field at Bintan Lgoon Resort and interviewing methods that are used by discussing and sharing and asking questions senior and staff.
