Abstract
Pariwisata dalam proses perkembangannya membutuhkan peranan dari hotel, pada dunia perhotelan, hal yang perlu diperhatikan dalam dunia perhotelan adalah kepuasan tamu. Swissbell harbourbay batam adalah salah satu hotel ternama di kota Batam yang selalu meningkatkan kuantitas dan kualitas untuk menaikkan citra dan juga kepuaasan dari konsumen. upaya yang dapat dilakukan adalah meningkatkan kualitas departemen dimsum kitchen. Departemen ini tanggung jawab menyediakan dan menjaga kualitas makanan dim sum di hotel. Laporan penulisan ini ditulis untuk memperoleh dasar ilmu dalam operasional dapur kitchen di Swisbell habourbay batam, serta merumuskan permasalahan yang terkait dengan pengelolaan , persiapan dan penyajian dimsum. Praktek kerja lapangan ini banyak memberi ilmu dasar dalam pembuatan produk dimsum, melalui praktek kerja lapangan ini penulis dapat membungkus berbagai bentuk dimsum, membuat sambal dimsum, dan dapat memasak dengan benar. ********************************************************************** Tourism in the process of development requires the role of the hotel. Swissbell hotel that is located in Habourbay Batam is a four star hotel that deliveres good quality services in order to achieve guest satisfaction. One of the responsibilities is to improve the kitchen department especially in Dimsum section. This report was written to obtain basic knowledge regarding the operation that happens in Swissbell Hotel in the kitchen section. This writing report was written to obtain the basic knowledge in kitchen kitchen operations in Batam Swisbell habourbay, as well as formulate problems related to the management, preparation and presentation of dimsum. This field work practice gives a lot of basic knowledge in making dimsum products, through this field work practice the writer can wrap various forms of dimsum, make dimsum sambal, and can cook properly.
