Abstract
Kota Batam merupakan bagian dari Provinsi Kepulauan Riau yang memiliki potensi laut yang luas sehingga wisata kuliner yang disediakan di kota Batam banyak memberikan menu-menu berbahan dasar hasil laut seperti seafood. Pengolahan makanan seafood disajikan umumnya di-steam atau dibakar. Resto seafood yang ada di Batam saat ini banyak menggunakan alat pemanggang ikan yang masih tradisional sehingga pada saat proses pemanggan perlu diawasi agar ikan yang dipanggang tidak gosong. Oleh karena itu dibutuhkan alat pemanggang otomatis yang mampu melakukan pemanggangan tanpa perlu diawasi. Pemanggang otomatis yang dirancang menggunakan metode fuzzy logic controller (FLC) yang digunakan sebagai pengendali temperatur dalam tungku pemanggang. Kontrol suhu dilakukan melalui pengaturan fan dan kecepatan exhaust fan. Cara kerja dari system ini dimulai dengan menentukan 3 rule base dasar dari metode FLC, pemanggang ikan dilakukan secara otomatis dengan memutar penjepit ikan diatas panggangan. Putaran penjepit ikan tersebut akan berhenti jika ikan sudah matang. Hasil dari pengujian menunjukkan dengan menggunakan metode FLC dengan 3 rule base sistem yang dirancang mampu melakukan pengontrollan temperatur pada tungku dan mampu melakukan pemanggangan dengan baik sesuai dengan yang diharapkan. ********************************************************************** Batam City is a part of the Riau Islands Province which has a tremendous sea potential. Thus, culinary tourism provided in Batam provides many menus based on seafood such as seafood. Seafood food processing is served generally steam or burnt. Seafood restaurants in Batam currently mostly use traditional fish grills, as the consequence, during process it needs to be monitored with the aim of the grilled fish does not burn. Therefore we need an automatic grilling tool that is capable of baking without being monitored. Automatic grills were designed using the method of fuzzy logic controller (FLC) which is used as a temperature controller in the baking furnace. Temperature control is executed through the fan settings and the exhaust fan speed. The workings of this system are started by determining the 3 basic rule bases of the FLC method. Grilling the fish is done automatically by turning the fish tongs on the grill. The fish tongs rotation would stop when the fish is cooked. The results of the test showed that by using the FLC method with 3 rule base systems designed are able to control the temperature of the furnace and able to roast properly as expected.
